Château Gilette winery (Sauternes)
Château Giletteis an exceptional winery in the renowned wine-growing region of Sauternes in Bordeaux. It is known above all for its unique, decades-long ageing process, which sets it apart from all other producers in the region.
History and ownership
The winery can look back on over 300 years of history. Its origins date back to 1710, when two important Sauternes families were united by marriage. The estate was given as a wedding gift to the Médeville family, who still own it today. The estate is currently run by Julie and Xavier Gonet-Médeville.
The unique vinification method: The secret of the "unicorn wine"
What makes Château Gilette famous worldwide is its unusual and completely unique ageing philosophy. Instead of marketing the wine after just a few years, the wines are aged here for between 20 and 25 years on average - around 15 to 20 years of which are spent in large concrete cylinders before they are even bottled . This approach came about rather by chance: during the Second World War, the then owner René Médeville was a prisoner of war. On his advice, his wife left the wines untouched in the tanks. On his return, he discovered that the wines had gained enormous complexity due to the long ageing period - a style that was subsequently retained.
Due to this extreme ageing period before the wines are released onto the market, the winery is often referred to as "unicorn wine" - something unique and very rare. The wine is aged exclusively in concrete tanks and never comes into contact with oak barrels, which gives it a very pure and unadulterated character.
Vineyard and terroir
The 4.5-hectare walled vineyard is located in the heart of the village of Preignac. The protective walls prevent strong winds, keep the moisture necessary for noble rot (Botrytis cinerea) in the vineyard and thus favour the development of the highly concentrated noble rot grapes. The vines are planted with 90% Sémillon, supplemented by Sauvignon Blanc (8%) and Muscadelle (2%).
Vinification and quality
The grapes are harvested in an extremely elaborate process in which the grapes are selected berry by berry by hand - only concentrated berries that are perfectly penetrated by noble rot are harvested. The resulting wine then undergoes decades of ageing in concrete.
Style and evaluation
The result is a sweet wine of exceptional concentration, complexity and longevity. Despite its intense sweetness, it is always infused with a vital, fresh acidity that gives it an exciting balance. It is characterised by aromas of candied fruit, honey, apricot and orange, as well as complex notes such as crème brûlée and exotic spices. The famous wine critic Robert Parker once described Château Gilette as "one of the best wines in Sauternes".
