Domaine Jean Dauvissat Père et Fils – A guardian of the Chablis tradition
Domaine Jean Dauvissat Père et Fils is a family-run winery deeply rooted in the Chablis tradition. Founded in 1955, the estate has established itself in Milly, in the heart of the wine-growing region, and is now run by Fabien Dauvissat, who took over the reins in 2009 . The estate’s philosophy is remarkably simple yet demanding: to express the terroir in its purest form .
This dedication is evident in the cultivation of the approximately 24 hectares of vineyards, which are spread across a remarkable 55 individual plots . These plots are situated on both sides of the Serein Valley and benefit from the varying microclimates and soil compositions, which are responsible for the great diversity of the wines . The soil consists of the Kimmeridgian limestone typical of Chablis, rich in fossilised oysters, which lends the wines their distinctive minerality . The estate’s portfolio encompasses three of the four appellation tiers: Petit Chablis, Chablis and a wide range of Premier Crus such as Côte de Léchet, Fourchaume, Montmains, L’Homme Mort and Vaillons .
A decisive turning point in the estate’s recent history was its takeover by Fabien Dauvissat. He initiated a systematic shift towards more sustainable and natural winemaking. The domaine has been managed biodynamically since 2018, and official organic certification followed in 2022 . Chemical weedkillers and insecticides are completely avoided . In the cellar, the focus is on vinification that is as natural as possible, using indigenous yeasts and a long ageing period of one to two years, to preserve the purity and character of the Chardonnay grapes . The result is wines of great finesse and a precise, mineral structure that reflect the heritage and quality of this long-established estate .
