The stills at Bowmore are still the smallest on the island, and their traditional shape gives the spirit an oily texture and remarkable depth. Maturation is completed in the damp, cool warehouses, which lie so close to the sea that the spray from the waves brushes against their walls. In American bourbon and Spanish sherry casks, the young whisky rests for years, whilst time bestows upon it its distinctive notes of dark chocolate, sweet toffee and a hint of orange blossom.
