1. Introduction and historical background

Founded in 1818 by the marriage of Nicolas François Billecart and Elisabeth Salmon, the Billecart-Salmon Champagne House is still one of the few large family-owned houses and is now in its seventh generation.

The house is closely associated with innovations that have revolutionised champagne production. In 1958, Charles Roland-Billecart introduced "cold clarification", a process in which the grape must is cooled so that lees sink to the bottom in order to avoid unwanted flavours. His son Jean Roland-Billecart later used longer, cooler fermentations to preserve the freshness and finesse of the wines.

In the 1970s, Jean Roland-Billecart ventured another experiment: he took on a champagne that was considered "second-rate" at the time - a Brut Rosé. His aim was to create a very pale rosé with fresh, subtle red berry flavours.The venture succeeded, and the Brut Rosé became the house's flagship cuvée. It is still produced according to the same tried and tested secrets today and enjoys an excellent reputation, not least thanks to its outstanding quality, which has allowed it to become a firm favourite in top gastronomy.

Billecart-Salmon Brut Rosé is a so-called assemblage rosé(Rosé d'Assemblage). This means that a proportion of red Pinot Noir is added to its base blend of still white wines, giving it its characteristic colour and fruity notes.

The exact composition of the blend varies slightly depending on the vintage in order to ensure a consistently high standard of quality and flavour. A typical blend consists of:

  • Chardonnay (approx. 40-45%): From the best vineyards in Champagne, gives freshness and elegance.
