Dom Pérignon 1971presents itself as a mature champagne of exceptional complexity and elegance. After more than five decades of ageing in the bottle, it has a deep golden colour with amber reflections, while the perlage is only subtly present - a sign of its maturity.
A harmonious bouquet of dried apricots, dates and figs unfolds onthe nose, accompanied by classic yeast and biscuit notes. Slight hints of honey, roasted almonds and a subtle oxidised note (sherry touch) give it additional depth.
On the palate, it impresses with a creamy texture and a balanced, soft acidity. The aromas develop from caramelised citrus fruits and burnt sugar to tobacco, coffee and a mineral spiciness. The finish is long-lasting and leaves impressions of buttery biscuits and a gentle nuttiness.
Conclusion: An outstanding, fully mature champagne that epitomises the great tradition of Dom Pérignon. It has reached its peak and should be drunk soon. Ideal as a meditative aperitif or with fine dishes such as lobster, truffle risotto or mature Comté.
