Chat Sauvage (winery) - Rheingau

Background:Chat Sauvage is a young, up-and-coming winery in the Rheingau, known for its unconventional, purist and natural approach. The name (French for "wild cat") reflects the philosophy: lively, untamed and authentic wines with a clear expression of the terroir.

Philosophy & style: The winery stands for minimalist interventionin the cellar. The wines are often fermented spontaneously and mature on the fine lees. The style is characterised by a lively acid structure, crisp fruit and a salty, mineral texture. The wines are often more direct, less polished and more powerful than many classic Rheingau Rieslings.

Grape varieties & range: The centrepiece is of course Rieslingfrom selected vineyards, which is offered in various Prädikat levels (from dry GG to fine sweet reserve). However, the cuvées from old Silvaner vines as well as unusual, inspired blends (e.g. "Wilder Satz" from several white varieties) and Pinot Noir (Pinot Noir)are also a special trademark .

Character: Chat Sauvage wines are characterised by great drinkability, an intense mineral character and a certain wildness and rusticity. They are powerful, honest and undisguised terroir ambassadors.

Summary:Chat Sauvage stands for a new, fresh and experimental generation in the Rheingau. The wines consciously break with some conventions and seek the maximum expressiveness of the vine and soil. They are appreciated by wine lovers who are looking for lively wines with a strong character and less corrected wines.

Typical characteristics:unfiltered, spontaneously fermented, reduced cellar technology, emphasised minerality and acid structure, often available in characteristic Bocksbeutel bottles.
