Noble oxidation (rancio): Walnut, hazelnut, old Madeira, Oloroso sherry, cedar wood box, moist humus.
Botrytis & exoticism: Grassy honey, saffron, ginger, carambola, strained mirabelle plum, a hint of truffle.
Citrus & acidity: A ghostly, life-saving hint of lemon zest, blood-red orange or quince.
Minerality: Even after 100 years, the mineral signature of the Freundstück soil(red sandstone with volcanic deposits) can still shine through as a salty, stony undertone.
Palate
On the palate, the wine is a paradox of extreme concentration and floating lightness.
Texture: Fat, oily, syrupy and of infinite density, but never sticky or heavy due to the acidity . It coats the palate like liquid velvet.
Acidity: The absolute secret of its longevity, the lively, electric acidity (typical of great 1920s wines) cuts through the sweetness like a diamond, giving the wine its transcendent tension, freshness and length and keeping it alive.
Flavour: An orchestrally powerful confirmation of the nose: a symphony of dried fruit, nuts, exotic spices and honeyed botrytis.

Soil: A unique mixture of coloured red sandstone with deposits of melaphyre (volcanic rock). This gives the wines a unique mineral strength, flavour and incomparable depth that sets them apart from the TBAs of other regions (e.g. Rheingau).

Provenance: The only decisive factor. A bottle must have been storedabsolutely cool (10-12°C), dark, horizontally and unshaken for its entire life. Any fluctuation in temperature will dramatically shorten its lifespan.
Fill level: Must be"high shoulder" or better. Every centimetre lost means oxidation and a reduction in quality.
Cork & label: After 100 years, the cork is a miracle if it holds. An intact original label completes the historic object.
Bottle shape: Old "mallet bottle" or modern shape? The former increases authenticity.
Risk of opening
High. Despite perfect storage, the wine may beover-oxidised, tired or spoilt by cork defects. Opening is an act of faith and courage.
