Sensory description (with good ageing)
After 49 years of ageing in the bottle, this wine has completely transformed its youthful fruit freshness into a complex maturity profile. A well-preserved 1975 Kabinett can display breathtaking elegance.
Colour
A bright, radiant golden yellow with clear greenish reflections. The colour is surprisingly fresh for its age, a sign of intact acidity.
Nose
The bouquet is fine, complex and characterised by a wonderful blend of ripeness and cool minerality. Primary fruit has receded in favour of tertiary and mineral aromas.
Ripe & dried fruit: Apricot jam, dried mirabelle plum, lemon zest marmalade, a hint of sultana.
Petrol & minerality: The classic petrol note of old Rieslings is clearly pronounced - not intrusive, but elegant. This is complemented by the cool minerality of the Badstube: Slate dust, damp pebbles, a smoky note.
Spice & botrytis: Delicate notes of ginger, white pepper, honeycomb and a slight floral memory (acacia).
No signs of fatigue or excessive oxidation (Madeirisation).
Palate
On the palate, the sensory elegance is confirmed. The wine is light but with an enormous presence.
Texture: Delicate, silky and light as a feather. The residual sweetness(typical for Kabinett) is almost completely integrated into the texture and the overall impression and acts as a flavour rounding, not as a distinct sweetness.
Acidity: Brilliant, electric and the real backbone, it carries the wine, gives it its breathtaking tension and freshness and is the main reason for its longevity. It cuts cleanly through any lingering sweetness.
Palate: A perfect continuation of the nose: ripe apricot, petrol, slate and a spicy component merge into a harmonious whole.
Finish: Surprisingly long and clean. The finish is dominated by mineral coolness, petrol and a refreshing citrus bitterness. Leaves an invigorating, salty impression.
Vintage & location
1975 vintage on the Moselle
An outstanding, classic and very acidic vintage. The wines were often tart and reserved in their youth, but possessed an excellent framework for long maturation. Today, the best 1975s are considered prime examples of the ageing potential of Mosel Rieslings.
Bernkasteler Badstube site
A large site comprising several individual vineyards. The soils consist of Devonian slate, which gives the wines their typical smoky, mineral characterand racy acidity. The Badstube is less steep than the Doctor, but still produces fine, elegant and long-lasting Rieslings.

The wine has reachedits optimum drinking window for at least 15-20 years and is on a plateau of great complexity. It is a perfect example of a fully mature Riesling.
Development potential
Peak: Now. No further improvement is to be expected.
Shelf life: With perfect cellaring, it can remain in this state for another 5-10 years, but will then slowly lose its freshness and tension.
Risk: The biggest enemy is a cork fault or excessive oxidation, which will make the wine appear flat and tired.
