Billecart-Salmon – The delicate sound of the seventh generation

Where the chalk cliffs of Champagne have, since time immemorial, held the light of the sun within their pores, where the vines of the Montagne de Reims and the Côte des Blancs rustle in the gentle north wind, a champagne house was founded in 1818 a champagne house was founded which, like no other, embodies the elegance and delicacy of this landscape. It was the marriage of Nicolas François Billecart and Elisabeth Salmon, who, together with Elisabeth’s brother Louis, laid the foundations for a house whose motto still resonates today: ‘Prioritise quality and strive for excellence’.

Over seven generations, this promise has been guarded like a precious secret. Today, Mathieu Roland-Billecart carries his ancestors’ legacy into the future. The house cultivates around 100 hectares of its own vineyards and sources grapes from more than 40 crus in the region’s finest terroirs .

But what truly sets Billecart-Salmon apart is the art of slow, gentle refinement. As early as the 1950s, Jean Roland-Billecart introduced a longer fermentation period at cooler temperatures, thereby revolutionising the winemaking process . In the house’s cellars, which stretch for over two kilometres through the limestone of Aÿ-Champagne, the bottles mature with quiet patience. The non-vintage Champagnes are aged on the lees for at least three years – twice as long as required – whilst the vintage cuvées are aged for up to ten years.

The crowning glory of this art are two iconic wines: the Brut Rosé, which Jean created in the 1970s with its pale colour and refreshing notes of red berries, became the house’s flagship wine , and the Clos Saint-Hilaire, a Blanc de Noirs from a single, one-hectare plot cultivated using draught horses. Each year, only 3,500 to 7,500 individually numbered bottles of this masterpiece are produced.

In 1999, the 1959 vintage champagne was crowned ‘Champagne of the Millennium’ at a blind tasting of 150 vintages . Billecart-Salmon is more than just a champagne – it is the delicate melody of a family that defies the passage of time, a liquid poem of fruit, minerality and the infinite patience of the chalk cellars.
