Pinot Noix Ultra Brut – Daniel Twardowski

This is a single-varietal Pinot Noir sparkling wine from the Moselle, specifically from the Dhroner Hofberg vineyard . Whilst the spelling ‘Drohner Hofberg’ is commonly used, the correct form is Dhroner Hofberg.

Winemaker and vineyard
Daniel Twardowski is a Mosel winemaker renowned for his Pinot Noir. He cultivates plots on steep, schist-covered slopes around Dhron. The Dhroner Hofberg vineyard is a high-quality Burgundy-style site where Twardowski grows vines of excellent Burgundy clones.

The sparkling wine
The Pinot Noix Ultra Brut is a Blanc de Noirs, i.e. a sparkling wine made from red grapes that are pressed to produce white must. The base wine is predominantly from the 2021 vintage and is aged for twelve months in used barriques. This is followed by bottle fermentation using the traditional method, with approximately 30 months’ ageing on the lees and disgorgement in March 2025.

Ultra Brut, very dry, only approx. 1 g/l residual sugar
12% ABV
On the nose, rather oxidative and nutty, with notes of toasted salted almonds and sesame
On the palate, notes of slightly bruised apple, lemon zest, dried pineapple and a hint of passion fruit
Accompanied by a hint of cold smoke, umami and dried hay in the long finish
Distinct acidity; despite its maturity, it feels very young and fresh
Good ageing potential; a few years’ cellaring would do it good
