The Collio DOC Pinot Grigio Livon 2023 is a dry, elegant white wine from the renowned Italian wine-growing region of Collio in Friuli-Venezia Giulia. Vinification & terroir

The grapes for this wine come from the vineyards of the Livon winery in the municipality of Dolegna del Collio, in the heart of the Collio DOC. The soils are rich in marl and clay, known locally as "ponca", and give the wine a particular minerality. The grapes are harvested by hand, followed by gentle pressing and cold maceration for around eight hours. Fermentation takes place at a controlled temperature of 18°C in stainless steel tanks. The wine then matures for around five months on the fine lees in the same stainless steel tanks to preserve freshness and fruity flavours. Some sources also mention partial fermentation in barriques.

Palate: On the palate, the wine is dry, full-bodied and well-structured. It has a lively but subtle acidity, which gives it a fresh and lively character and a good balance . The fruit flavours are accompanied by a distinctive minerality that reflects the terroir.

Finish: The finish is medium to long-lasting and persistent, with a final impression of freshness and elegance.
