Tasting note Dom Pérignon 1973

Appearance:
The colour is a deep, warm gold with light amber reflections - a sign of decades of ageing. The perlage is fine and restrained, yet still perceptible, with a delicate veil that slowly rises in the glass.

Bouquet:
The bouquet is complex and multi-layered. Ripe notes of dried apricots, honeycomb and caramel are dominant, accompanied by a spicy underlay of saffron, almond slivers and a subtle oxidation reminiscent of old library leather volumes. Slight hints of biscuit, toasted bread and a hint of mushrooms emphasise the elegant ageing.

Palate:
The palate reveals a harmonious balance between mature sweetness and restrained but present acidity. Flavours of candied citrus fruits, hazelnut and honey melange dominate, complemented by mineral accents and a subtly salty texture reminiscent of sea air. The structure is silky and creamy, with an almost velvety mouthfeel that is gently enlivened by the fine perlage.

Finish:
The finish is long-lasting and leaves a hint of roasted nuts, vanilla and a hint of bitter orange. The final spiciness and a slight earthy note add depth and invite reflection.
